Food Truck Line Cook (Full-Time / Part-Time)
Location: Lost Art Brewhouse – Walker, MI
Reports to: Catering Director/Owner
Schedule:
Variable shifts including mornings, nights, weekends, and select holidays. We’re a busy FOOD TRUCK attending events in and around West Michigan—flexibility is key!

This position is specifically for our CATERING FOOD TRUCK which operates year round. We focus on corporate lunches and private events, but also attend public sale events such as Food Truck Fridays, Kentwood Food Truck Festival, farmers markets, and much more.

Position Summary:
The Food Truck Line Cook sets the pace on the line: prepping, cooking, plating, cleaning, and communicating to keep service smooth and guests happy. You’ll rotate through stations (grill, fry, hot line) and support the full service day—from opening prep to end-of-night breakdown.
Key Responsibilities
Daily Line Execution:
- Cook and plate menu items to spec, fast and accurate, during peak service.
- Maintain clean, stocked, and organized stations.
- Communicate ticket times and 86s with all team members.
- Follow all recipes, portioning, and plating standards.
Opening Duties (as scheduled)
- Review prep sheets; prioritize hot vs. cold prep.
- Complete station set-up: stocks, sauces, proteins, produce, fryers, smallwares.
- Verify food safety temps on cold and hot holding units.
- Prep batch items, sauces, dressings, and specials as directed.
- Label & date all product; rotate using FIFO.
Closing Duties (as scheduled)
- Properly cool, label, date, and store leftovers.
- Break down and deep-clean assigned stations (grill grates, fryers skimmed/filtered per schedule, cutting boards sanitized, etc.).
- Wrap, cover, and store mise for next shift.
- Sweep & mop kitchen line and prep areas; take out trash & compost.
- Complete close checklist and sign off with MOD or Catering Director.
Food Safety & Cleanliness:
- Follow ServSafe (or equivalent) protocols: handwashing, cross-contamination prevention, temp logs.
- Adhere to allergen procedures and separate tools when flagged tickets fire.
- Maintain sanitation, chemical, and labeling compliance.
Team & Culture:
- Show up on time, in uniform, ready to move.
- Jump in where needed—prep, dishes, line support.
- Communicate clearly and respectfully in the heat of the rush.
- Help train new team members when assigned.
Qualifications
Required:
- 1+ year line or fast-casual kitchen experience or strong work ethic + willingness to learn quickly.
- Reliable night & weekend availability; ability to work a mix of opening and closing shifts.
- Able to lift 40 lbs., stand for long periods, and work in a HOT (temperatures in our food truck can reach above 100 degrees on summer days), fast-paced environment.
- Basic knife skills and willingness to follow recipes.
Preferred:
- Previous experience in a kitchen, brewpub, or high-volume restaurant.
- ServSafe Food Handler or Manager Cert (or ability to obtain within 60 days).
- Familiarity with batch prep, fryer maintenance, and temp logging systems.

Availability Expectations:
We schedule across lunch, dinner, and late service depending on events. Candidates must be available for:
- At least 3 weekend shifts per month (Fri / Sat / Sun).
- A mix of opening (7–10am start) and closing (out ~11pm; varies by day & events) shifts.
- Peak event weeks with expanded service hours.
- HOURS VARY BY BOOKED EVENTS - some weeks could be 10 hours, some could be 40 hours.
