The Opportunity:

We’re opening a year-round waterfront restaurant on Smith Cove in Niantic — and we need a Line

Cook who takes real pride in their work to be part of building it from the ground up.

Three Belles Outfitters Café is not a seasonal snack bar. It’s a genuine coastal dining destination: a broad American coastal menu, a curated beer and wine program, 30–50 indoor covers, and a patio on the water. We serve marina members, local Niantic diners, and guests coming off guided paddles and sunset cruises. The kitchen is new, the team is being assembled now, and the setting is one of the most beautiful on the Connecticut shore.

The kitchen’s job is to make sure the food is worthy of where people are sitting.

What You’ll Do

  • Execute your station to the Head Chef’s standards on every plate, every service
  • Keep mise en place tight and your station clean throughout the shift
  • Support prep, breakdown, and receiving duties as part of the team
  • Execute catering for private events and experience pairings — post-paddle snacks, sunset drinks, event dinners for up to 50 guests
  • Adapt to a menu that evolves with the season and grows with the concept
  • Treat your colleagues with respect and contribute to a kitchen culture worth working in

What We’re Looking For

  • 2+ years in a professional kitchen as a line cook or equivalent
  • Solid technique across sauté, grill, fry, braise, roast
  • Works clean and organised under service pressure
  • Strong on food safety, FIFO rotation, and proper storage
  • Reliable, punctual, coachable — the kitchen depends on everyone showing up ready
  • Clear verbal communication during service

Preferred (not required):

  • Experience with New England coastal ingredients and seasonal sourcing
  • Multi-station flexibility — small kitchen team means versatility matters
  • Catering or event experience (20–50 covers)
  • ServSafe or equivalent — required before first shift if not already held

What We Offer

  • $20–$24 per hour — above the Connecticut market average, commensurate with

experience
